Lemon Cheesecake with Dried Citrus Garnish

  • 200g digestive biscuits
  • 100g melted butter
  • 500g cream cheese
  • 200g caster sugar
  • 3 large eggs
  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • Airdd's dried citrus slices (for garnish)

  1. Start by making the base of your cheesecake. Crush the digestive biscuits into fine crumbs and mix with the melted butter. Press this mixture into the bottom of a springform cake tin and chill in the fridge.

  2. Preheat your oven to 180°C. In a large bowl, beat the cream cheese until smooth, then add the caster sugar, eggs, lemon zest, and vanilla extract. Mix until well combined.

  3. Pour the cream cheese mixture over the biscuit base in the cake tin. Bake in the preheated oven for about 40-45 minutes, or until the cheesecake is set but still has a slight wobble in the centre.

  4. Allow the cheesecake to cool in the tin, then refrigerate for at least 3 hours, or overnight if possible.

  5. Before serving, garnish the top of the cheesecake with Airdd's dried citrus slices. Arrange them in a pattern of your choice, or simply scatter them across the top for a rustic look.

The dried citrus slices add a beautiful pop of colour and a delightful crunch to the creamy cheesecake. Plus, they infuse the dessert with a subtle citrus aroma that's sure to tantalise your taste buds.

So there you have it, folks! A simple yet stunning dessert that's sure to impress at your next gathering. Remember, it's all about adding that bit of zest to your life, and our dried citrus slices are just the ticket.

Until next time, happy baking!
